Japan Sake wine Sake is defined as a brewed alcoholic beverage. The brewing process is more complex than that employed for beer and wine. There are two main processes involved in the brewing of sake: saccharification where the Koji break the starch down into glucose; and fermentation by the sake yeast whereby the glucose is converted into alcohol. These two processes proceed in the same tank at the same time; this is known as multiple parallel fermentation. Additionally, the fermentation of sake takes around longer than that of other brewed alcoholic beverages. This lengthy and complex process produces a wide variety of amino acids giving sake a fresh flavour and a balanced and rounded taste. How is sake good for health and beauty There is a Japanese proverb which claims that sake is the best of all medicines. Sake is thought to be an ingredient of a healthy lifestyle when enjoyed in moderation. It contains amino acids and peptides which help maintain the smoothness of the skin and are good for the overall health of the body. It is generally reported that sake can have positive effects on cholesterol levels and blood pressure. How to drink sake: hot or cold There is no alcoholic beverage that can be enjoyed in such a wide range of temperatures as sake. Sake is enjoyed at temperatures ranging from 5 C 41 degrees F to 55 degrees C 131 degrees F. If you drink it cold, at about 10 degrees C, you can feel the refreshing and subtle aroma of sake. The fresh smell and sharp taste are characters of cold sake. Cold sake can be enjoyed, not only with Japanese foods, but Western foods also. It will even wash away the aftertaste of oily foods. If you drink it warm or hot, you can feel the deep taste and flavors of sake which can only be appreciated when it is served at higher temperatures. It is said that serving sake at higher temperatures increases the influence of the alcohol helping to engender greater feelings of relaxation. Warm or hot sake is suited to drink in winter seasons. We recommend that sake is served in small measures such as in a small sake cup or ochoco, or in a small, elegant glass.
